WINTER SQUASH GUEST POSTS
WINTER SQUASH VARIETIES
There are so many varieties of winter squashes, but the one that attracted me most is the turban squash. They are so uniquely beautiful and artistically textured with marry colors and shapes.
It was love at first sight for me. We don’t have this variety in Malaysia, so I started to request for guest posts…

However, through the feedbacks I got, not many bloggers have seen this either..so the idea got diversified to turban squash paintings, poems, cartoons, sketches apart from food recipes. ha ha. Just recipes, I have not received any turban squash photo from anyone, must be rare..

The ones published were all images from Wikimedia Commons….with many thanks…

History:

The origin of squash is not really known, but the word "Squash" comes from the Narragansett Native American word Askutasquash, which means "eaten raw or uncooked."

Squashes are one of the oldest known crops--10,000 years by some estimates of sites in Mexico
A)For making  pies, ancient Pilgrims first hollowed out a pumpkin, filled it with apples, sugar, spices and milk, then put the stem back on and baked.

From South America to Africa to India and Asia and even in some parts of the United States, no single food provides a greater percentage of certain carotenoids than WINTER SQUASHES

WINTER SQUASH VARIETIES
1) 2nd may 2011. The first guest post..was from the United States..Sardonic salad, a Toon blog, where, a clever squash by the name of Mr butternut shrunk2, in order to avoid being stewed, had to disguise himself as an eggplant- he did this by painting his yellow skin, to a purple color.

Aint that smart? Ya, only clever squash can do this trick. What the heck, no one can.

2) The art of digital photography can produce artsy photographs of oil painting or water color painting effects . Also the classic sepia and antique effects, which brings one down memory lane.
Some people preserved nature whilst others preserved culture.

The traditional bridal procession with various musical instruments together with the chanting of poetic verses and a touch of mehndi, is well preserved in this Malaysian’s Traditional Weddings and a Events blog.. by syed alfandi from Kedah, Malaysia. Check this out at: http://www.samillenniumphotography.blogspot.com

3) Katrina wrote on her experiences, following her late husband, a planter, in ” Life in the oil palm and cocoa plantations in remote Sabah, deep in the jungles of Borneo.”

“The very basic of facilities. Water collected from roof gutters were processed in deep wells, then pumped into our homes for daily consumptions.

There were lots of fresh vegetables and fruits harvested from our own garden.

A very neighborly community of various races and we practiced barter trade especially on food.” A rare experience from Katrina at  http://www.woman724.blogspot.com

4) Next was balqis, from Sarawak, Malaysia- PART AND PARCEL OF LIFE- she asked.” Why is the salad so sardonic? “

CV says: I don’t know why balqis, “Why is your poem (that day) so melancholic” :) actually i must say i love reading your poems. Sometimes they hit me too, but i wont tell ya :) which one.. well, this is for you balqis, in response to your "paradise" poem :

I saw the humming birds flew gracefully to you
I wish the dolphins meet up and play with you too
until the soft sunrise…
another day in paradise….

5) Hella Heaven: Ana Luiza from  Brazil:  Quibebe Pumpkin recipe: *For lousy cookers*
oops ! , i changed this to **For those who don't know how to cook”. then, changed again to **For beginners**. Oops! Changed again to **For those who don’t how to cook**. .ha ha, finally, have to use this sentence, because googles already picked up these words in their listings… thanks ana, I am forgiven :)  OMG !

I almost missed this recipe, because just a day before I am supposed to get it, hella heaven’s blog went missing. The words and anxiety, still linger…..

After e few days, Ana got her blog back, but that was a real miracle..

6) Squash Candy – nice and easy recipe, with artistic sketches, from Speedy and Klaat from The Philippines.       http://www.valleyofcoconuts.blogspot.com/
Lynn (Speedy) said, her mom used to make this when she was small.

Bennix , also of the Philippines, commented- that his mom used to prepare this yummy recipe. I guess it’s a very popular dish amongst the pinoy people.

7) Spaghetti Squash by Cindy Paul from USA - a creative chef and an illustrator specializing in children’s art. She likes to use the computer as well as paint brushes and pencils to create her art pieces..

Amazingly pretty, and how the squash can look like very soft and sweeeeeet spaghetti strands.

So, that wraps up the winter squash Guest posts, there are a few more guest posts coming, but will not be on winter squashes anymore. O ya , as I promised, I have to do the serawa from squash, ok..will do that in future.
WINTER SQUASH VARIETIES
HEALTH BENEFITS OF WINTER SQUASHES;
From South America to Africa to India and Asia and even in some parts of the United States, no single food provides a greater percentage of certain carotenoids than WINTER SQUASHES

BETA-CAROTENE- Medline Plus- National Institute of Health- A service of The International Library of Medicine (exerpts)
Beta-carotene is converted to vitamin A, an essential nutrient. It has antioxidant activity, which helps to protect cells from damage.

Beta-carotene is one of a group of red, orange, and yellow pigments called carotenoids. Beta-carotene and other carotenoids provide approximately 50% of the vitamin A needed and can be found in fruits, vegetables, and whole grains. It can also be made in a laboratory.(as in supplementary nutrition)

Beta-carotene is used to decrease asthma symptoms caused by exercise; to prevent certain cancers, heart disease, cataracts, and age related macular degeneration (AMD); and to treat AIDS, alcoholism, Alzheimer’s disease, depression, epilepsy, headache, heartburn, high blood pressure, infertility, Parkinson’s disease, rheumatoid arthritis, schizophrenia, and skin disorders including psoriasis and vitiligo.

There are many authorities – including the American Heart Association, the American Cancer Society, the World Cancer Research Institute in association with the American Institute for Cancer Research, and the World Health Organization’s International Agency for Research on Cancer – that recommend getting beta-carotene and other antioxidants from food instead of supplements, at least until research finds out whether supplements offer the same benefits. Eating 5 servings of fruits and vegetables daily provides 6-8 mg of beta-carotene.

How effective is it?

Natural Medicines Comprehensive Database rates effectiveness based on scientific evidence according to the following scale: Effective, Likely Effective, Possibly Effective, Possibly Ineffective, Likely Ineffective, Ineffective, and Insufficient Evidence to Rate.
The effectiveness ratings for BETA-CAROTENE are as follows:

Effective for...
1. Treating sun sensitivity in people who have a form of inherited blood disorder called “erythropoietic protoporphyria.” use beta-carotene to reduce the risk of sunburn.
Possibly effective for...
1. Reducing the risk of breast cancer in women before menopause when fruits and vegetables containing beta-carotene are consumed. Beta-carotene seems to be especially effective for women who are at high risk of getting breast cancer, including those with a family history and those who use alcohol excessively.

2. Treating an eye disease called age-related macular degeneration (AMD) when used with other medicines. Taking 15 mg of beta-carotene by mouth along with 500 mg of vitamin C, 400 IU of vitamin E, and 80 mg of elemental zinc daily, seems to help prevent vision loss and worsening of AMD in people with advanced AMD. There isn’t enough evidence to know if this combination works for people with less advanced macular disease.

3. Preventing sunburn in people who are sun sensitive. However, beta-carotene is unlikely to have much effect on sunburn risk in most people.

4. Keeping a form of arthritis called osteoarthritis from getting worse. But taking beta-carotene doesn’t seem to prevent osteoarthritis.

5. Preventing bronchitis and difficulty breathing in smokers.

Beta-carotene from the diet seems to help, but beta-carotene supplements do not.                              6. Reducing the risk of ovarian cancer in women after menopause.
7. Reducing the risk of pregnancy-related death, night blindness, and diarrhea and fever after delivery in underfed women.
8. Preventing asthma attacks triggered by exercise.
9. Treating a tongue disease called oral leukoplakia.
10. Improving physical performance and strength in the elderly.

Are there safety concerns?

Beta-carotene is LIKELY SAFE when used for certain specific medical conditions and taken in appropriate amounts.
Beta carotene is good, but taking

Beta carotene SUPPLEMENTS are not recommended for general use.
Are there interactions with medications?

Moderate. Be cautious with this combination.

Medications used for lowering cholesterol (Statins)
Taking beta-carotene, selenium, vitamin C, and vitamin E together might decrease the effectiveness of some medications used for lowering cholesterol. It is not known if beta-carotene alone decreases the effectiveness of some medications used for lowering cholesterol.

What is it?

Niacin
Taking beta-carotene along with vitamin E, vitamin C, and selenium might decrease some of the beneficial effects of niacin. Niacin can increase the good cholesterol.

Are there interactions with herbs and supplements?

There are no known interactions with herbs and supplements.

Are there interactions with foods?

Alcohol - Drinking excessive amounts of alcohol can reduce the level of beta-carotene in the body and increase the level of another chemical called retinol. Researchers are concerned that this might increase the risk of cancer.

Likely ineffective for...

Onion - 1 no. (small)
Garlic - 3 pods

CREAM OF SQUASH

Dice the vegetables and add in the pressure cooker.Rinse the Dhal and add them to the vegetables..
1. Now add the spice powders.. and pressure cook for 2 whistles or until soft..
2. Let it cook and blend it to a puree.. garnish with freshly chopped cilantro leaves..
3. Adjust salt / pepper to your taste.

Tips & Tricks
1. It tends to easily get burnt when pressure cooking, U might want to be careful.

SPAGHETTI SQUASH RECIPE. ILLUSTRATIONS ON CHILDREN ART

SPAGHETTI SQUASH RECIPE AND CHILDREN ART ON TURBAN SQUASH.
SPECIAL GUEST POST BY CINDY PAUL

About Me

Cindy Paul

So happy to contribute in some small way to the cooking varieties blog. There are always interesting recipes and great food photos.

I am an illustrator specializing in children’s art. I like to use the computer as well as paint brushes and pencils to create my art. Please feel free to visit me at http://www.cindypaulblog.blogspot.com/.

My illustration highlights the turban squash which has a very unique appearance. It also looks like it will make a yummy soup.
IMAGE OF SPAGHETTI SQUASH

However, I have little experience with this squash so I am featuring the Spaghetti Squash.

Basically, you poke holes in it and then bake in a 350 degree oven for about an hour or until the skin is soft. Remove and cut in half. Scoop out the softened insides and the magic begins. The squash starts to look like spaghetti. I put in all in a bowl, add butter and salt to taste. It is sweet on its own and is quite flavorful. Enjoy!
THE MAGIC BEGINS- THE SQUASH STARTS TO LOOK LIKE SPAGHETTI

The other is a sample of the kind of illustrations I enjoy creating.

QUIBEBE CLASSICO RECIPE. QUIBEBE WINTER SQUASH RECIPE. SAVORY WINTER SQUASH WITH GARLIC AND OLIVE OIL RECIPE

I've  started this blog  to share the  good things people  create in  arts, science, leisure, ideas, no matter where or when.
A dash of humor, a drop of beauty and lots of  creativity.
Dignity is a word that follows me  not only at the blog but my life.
Thank you for the visit
Have a great weekend!

http://www.hellaheaven-ana.blogspot.com/

I can't believe I'm sharing a recipe! I don't know how to cook and what I do is improvising so the kitchen for me is a kind of lab whose experiments can result in something eatable, but delicious and yummy! are words seldom heard.

If I try something new, I gave up, but occasionally I try, chances are that the thing comes up very strange as the day I tried to cook fried cauliflower according to a recipe that had flour as ingredient.

When I did put the prepared florets to fry to my surprised it started swelling and swelling and it took some time for it to stop when I heard from the living-room:

"Do you need any help?" "No! Just relax and wait." I got nervous and kept frying all the florets, garnished a plate with vegetables of different colors and arranged the thing I had just cooked.

Some food were already at the table and I entered the living room triumphantly holding the plate with the... "I hope you like it. It is a variation of fried breaded cauliflower."
When I asked another friend what went wrong she told me that I shouldn't have put flour and eggs were enough.

I did a search and found some recipes tho I don't cook with recipes because when I look at the list of ingredients I paralyze: "6 eggs? O My! This is too much!" and so on.

I love pumpkin in all different ways it is prepared but Quibebe reminds me of my grandmother who used to do it in a way I'll never have it.

Quibebe is a word that comes from Africa and means mash and puree. I found a recipe (there is a Brazilian at this blog) that is more similar to the way I do:
QUIBEBE CLASSICO WINTER SQUASH RECIPE
Quibebe clássico or Savory winter squash with garlic and olive oil

Ingredients:

olive oil
1 medium size pumpkin/winter squash, peeled,
seeds removed, cut into even size squares
3 cloves garlic, minced
3 tbsp olive oil
½ tsp sugar
Kosher salt
Freshly ground black pepper
Approx ¾ cup of water
Fresh cilantro to garnish

Heat 2 tablespoons of olive oil in a deep pan. Add garlic and sauté for about 1 minute or so. Add squash cubes, salt, pepper and sugar. Give it a good stir. Add ½ cup water then cover pan.

Cook squash on high temperature for about 10-12 minutes or until squash is soft and partially collapsed. Adjust seasoning. Remove from heat. Let cool approx. 5-10 minutes. Drizzle with remaining olive oil. Transfer to a serving platter and decorate with a couple of sprigs of cilantro.
QUIBEBE
Quibebe pumpkin: for  those who dont know how to cook

Usually, the version that puree the pumpkin in a food processor, is the most used, but you can choose each according to what you're going to serve at the meal.

You can do it my way: buy pumpkin that is already cut in squares, put  the squares to cook in water

-at a pan- fry garlic, onion or both if you like; mash the pumpkins with a fork and put it at the pan and add some spices like ginger; pepper; basil; curry... your favorite spice.

It is quick and simple.  Bon appetit.

LIFE IN THE OIL PALM PLANTATIONS IN BORNEO. LIFE IN THE REMOTE OIL PALM AND COCOA PLANTATIONS IN GREEN BORNEO

KATRINA, THE AUTHOR OF WOMAN 724. IS MY GUEST WRITER ON
" LIFE IN THE REMOTE OIL PALM AND COCOA PLANTATIONS, LOCATED IN THE DEEP JUNGLES OF BORNEO..."
A VIEW FROM MY BALCONY- SEE THE MOUNTAINOUS  BACKGROUND
JUNGLE CLEARING MANAGEMENT AND SUPERVISION
My late husband was a planter, involved in jungle clearing works to open Oil Palm/Cocoa plantations deep in the jungles of Borneo

We had the very basic of facilities. Electricity driven by generators or oil lamps. Rain water from roof gutters, collected into deep wells for treatment, later pumped into our homes for daily consumption

Communications was bad. A twin otter plane serviced twice weekly, if weather permits. By land access was through Tabin Forest Reserve jungle tracks, hours of slippery, bumpy dirt roads. Upon heavy rains, these tracks may just get washed out and disappeared. Log bridges used can get washed away too, by the fast waters

We had to endure three similar river crossings (above) to get to the nearest town, if weather permits. If it rains, it was near impossible to get across the river due to the heavy traffic.

We may be cut off for weeks. So we had to turn to the rivers for our fresh fishes/prawns supplies. From the jungles, abundant supplies of fresh meat; deer, jungle buffaloes and  porcupines  are available and for Non Muslims, endless supplies of the wild boars.

Just down my kitchen steps, rows of asparagus plants.... fresh and delicious.
We grew our own fruits and vegetables including  pumpkins. We (barter) exchange of foodstuff; Our product harvests were distributed to everyone and likewise, the others did the same to us. Food was plentiful, fresh and free.

Maids picking long beans.. Fresh, crunchy and yummy

We had fruit trees around the compound. This rambutan fruit tree was just beside my house. Fruits everywhere, even touching the ground. The kids can just sit, chit-chat as they plucked and ate the fruits around them. There are 2 varieties-  yellow and red

Sepilok Orang Utan Sanctuary, Sandakan, Sabah, Malaysia, is one of the largest rehabilitation centre in the world for Orang Utan
I have one very best friend, actually both our hubbies were best of  friends when they were bachelors. They both died about the same age, within 5yrs of each other. That’s the picture of her daughter, Puteri Saerah, she's now a 3rd year medical student in Jordan

....My gardener was a strange man. Kind of too attached to each tree/plants around the house compound. Few months I requested that he trimmed off the unnecessary branches, some even spreading on the ground. He silently refused, and just let them grow. The trees and plants around our bungalow were like his family, I suppose!

I got some young boys from the estate to help him clear the area. Asked them to chop and clear off those branches, and the curry tree was huge (should have been just shrubs). The gardener was coining up all sorts of excuses; not this branch, not that, leave that one alone etc. When the boys finally chopped off these branches, he almost fainted!

A Danish guy who was working there before us and he was the former occupant of the bungalow which we stayed in. The estate started under a Company with it's headoffice in Copenhagen, Denmark. It has changed hands since then.
There are so many varieties of food preparation here, including those of the ethnic sabahan     communities, the malays, indonesian, chinese and indian  ways of cooking food.  We were so closely knit and very helpfull to each other, where most basic necessities are by way of barter   trade between us- in our own world. Sometimes i miss this kind of life very much

I plan to include an article on “Plantation Life” with many more pictures (from way back in the 1918’s) later in my blog @  http://www.woman724.blogspot.com/.

Cheers to all

The art of digital photography can produce artsy photographs of oil painting or water color painting effects .
GUEST POST BY SYED ALFANDI PHOTOGRAPHY AND  RAMBLINGS
WINTER SQUASH IN ARTSY DIGITAL   PHOTOGRAPHY
Syed Alfandi says: Hi, i graduated in marketing but end up as a professional photographer cum artist. In this blog I believed I have successfully combined photography and digital art to produce amazing results, as you can see from some of my original pieces here.
This blog focus mainly on Malaysian traditional and contemporary wedding ceremonies and other cultural fiestas, where Malaysia has plenty to offer. The events captured on camera are further explored in artsy digital photography works.
There’s a lot to capture at a traditional wedding, because this celebration usually lasts for a few days, at both the bride and groom’s place...with lots of changing of traditional attires for the camera.

I want to keep these traditions alive, of which some of them, are slowly being forgotten- here, in my blog, they are well archived for generations to come…save some in cyber !...
