I am finally here posting my First Guest Blog.. I should say it feels nice.. After a long hunt for a squash family member.. I finally settled for yellow squash.. and working with this for the first time.
Well, decided to make a guilt free soup with no oil or any kind of fat.. Lately I have been trying to discover oil free foods.. and this wonderful bowl definitely tops the charts.. Its a whole meal by itself.

To be honest, I was slightly surprised by the amazing creamy soupy consistency it had finally.

Ingredients :

Yellow Squash - 2 no. (small)
Masoor Dhal - 50 gm
Potato - 1 no. (medium)
Onion - 1 no. (small)
Garlic - 3 pods
Chilli Powder - 1tsp
Coriander Powder - 1tsp
Garam Masala - 1/2 tsp
Cilantro Leaves - for garnishing
Salt / Pepper - to taste

CREAM OF SQUASH
Preparation:
Dice the vegetables and add in the pressure cooker.Rinse the Dhal and add them to the vegetables..
1. Now add the spice powders.. and pressure cook for 2 whistles or until soft..
2. Let it cook and blend it to a puree.. garnish with freshly chopped cilantro leaves..
3. Adjust salt / pepper to your taste.

Tips & Tricks
1. It tends to easily get burnt when pressure cooking, U might want to be careful.
2. One can add cream for richer results..

My illustration highlights the turban squash which has a very unique appearance. It also looks like it will make a yummy soup.

However, I have little experience with this squash so I am featuring the Spaghetti Squash.

Basically, you poke holes in it and then bake in a 350 degree oven for about an hour or until the skin is soft. Remove and cut in half. Scoop out the softened insides and the magic begins. The squash starts to look like spaghetti. I put in all in a bowl, add butter and salt to taste. It is sweet on its own and is quite flavorful. Enjoy!

SQUASHY....
THINGS NEEDED (basic ingredients)

-Squash
-Water 
-Sugar


-Pot and ladle (cooking appliances)



PROCEDURE (THE EASY WAY TO DO IT)
Peel the skin off (squash)
Cut into pieces
Boil water in the pot (good enough to soften the squash)
Upon boiling, stir in the squash
Keep the water boiling until the squash is soft and can be smashed with a spoon or fork
When it is soft, smash it with the ladle (make sure less water left in the pot)
Stir in the sugar (according to taste) and mix until it gets sticky

I can't believe I'm sharing a recipe! I don't know how to cook and what I do is improvising so the kitchen for me is a kind of lab whose experiments can result in something eatable, but delicious and yummy! are words seldom heard.

If I try something new, I gave up, but occasionally I try, chances are that the thing comes up very strange as the day I tried to cook fried cauliflower according to a recipe that had flour as ingredient.

When I did put the prepared florets to fry to my surprised it started swelling and swelling and it took some time for it to stop when I heard from the living-room:


"Do you need any help?" "No! Just relax and wait." I got nervous and kept frying all the florets, garnished a plate with vegetables of different colors and arranged the thing I had just cooked.


Some food were already at the table and I entered the living room triumphantly holding the plate with the... "I hope you like it. It is a variation of fried breaded cauliflower."
When I asked another friend what went wrong she told me that I shouldn't have put flour and eggs were enough.

I did a search and found some recipes tho I don't cook with recipes because when I look at the list of ingredients I paralyze: "6 eggs? O My! This is too much!" and so on.


I love pumpkin in all different ways it is prepared but Quibebe reminds me of my grandmother who used to do it in a way I'll never have it.


Quibebe is a word that comes from Africa and means mash and puree. I found a recipe (there is a Brazilian at this blog) that is more similar to the way I do:
QUIBEBE CLASSICO WINTER SQUASH RECIPE
Quibebe clássico or Savory winter squash with garlic and olive oil

Ingredients:


olive oil
1 medium size pumpkin/winter squash, peeled,
seeds removed, cut into even size squares
3 cloves garlic, minced
3 tbsp olive oil
½ tsp sugar
Kosher salt
Freshly ground black pepper
Approx ¾ cup of water
Fresh cilantro to garnish

Heat 2 tablespoons of olive oil in a deep pan. Add garlic and sauté for about 1 minute or so. Add squash cubes, salt, pepper and sugar. Give it a good stir. Add ½ cup water then cover pan.


Cook squash on high temperature for about 10-12 minutes or until squash is soft and partially collapsed. Adjust seasoning. Remove from heat. Let cool approx. 5-10 minutes. Drizzle with remaining olive oil. Transfer to a serving platter and decorate with a couple of sprigs of cilantro.
QUIBEBE
Quibebe pumpkin: for  those who dont know how to cook


Usually, the version that puree the pumpkin in a food processor, is the most used, but you can choose each according to what you're going to serve at the meal.

You can do it my way: buy pumpkin that is already cut in squares, put  the squares to cook in water

-at a pan- fry garlic, onion or both if you like; mash the pumpkins with a fork and put it at the pan and add some spices like ginger; pepper; basil; curry... your favorite spice.


It is quick and simple.  Bon appetit.

LIFE IN THE OIL PALM PLANTATIONS IN BORNEO. LIFE IN THE REMOTE OIL PALM AND COCOA PLANTATIONS IN GREEN BORNEO

JUNGLE CLEARING MANAGEMENT AND SUPERVISION
My late husband was a planter, involved in jungle clearing works to open Oil Palm/Cocoa plantations deep in the jungles of Borneo

We had the very basic of facilities. Electricity driven by generators or oil lamps. Rain water from roof gutters, collected into deep wells for treatment, later pumped into our homes for daily consumption

Communications was bad. A twin otter plane serviced twice weekly, if weather permits. By land access was through Tabin Forest Reserve jungle tracks, hours of slippery, bumpy dirt roads. Upon heavy rains, these tracks may just get washed out and disappeared. Log bridges used can get washed away too, by the fast waters

We had to endure three similar river crossings (above) to get to the nearest town, if weather permits. If it rains, it was near impossible to get across the river due to the heavy traffic.


We may be cut off for weeks. So we had to turn to the rivers for our fresh fishes/prawns supplies. From the jungles, abundant supplies of fresh meat; deer, jungle buffaloes and  porcupines  are available and for Non Muslims, endless supplies of the wild boars.

Just down my kitchen steps, rows of asparagus plants.... fresh and delicious.
We grew our own fruits and vegetables including  pumpkins. We (barter) exchange of foodstuff; Our product harvests were distributed to everyone and likewise, the others did the same to us. Food was plentiful, fresh and free.

We had fruit trees around the compound. This rambutan fruit tree was just beside my house. Fruits everywhere, even touching the ground. The kids can just sit, chit-chat as they plucked and ate the fruits around them. There are 2 varieties-  yellow and red

I have one very best friend, actually both our hubbies were best of  friends when they were bachelors. They both died about the same age, within 5yrs of each other. That’s the picture of her daughter, Puteri Saerah, she's now a 3rd year medical student in Jordan


....My gardener was a strange man. Kind of too attached to each tree/plants around the house compound. Few months I requested that he trimmed off the unnecessary branches, some even spreading on the ground. He silently refused, and just let them grow. The trees and plants around our bungalow were like his family, I suppose!

 
I got some young boys from the estate to help him clear the area. Asked them to chop and clear off those branches, and the curry tree was huge (should have been just shrubs). The gardener was coining up all sorts of excuses; not this branch, not that, leave that one alone etc. When the boys finally chopped off these branches, he almost fainted!

A Danish guy who was working there before us and he was the former occupant of the bungalow which we stayed in. The estate started under a Company with it's headoffice in Copenhagen, Denmark. It has changed hands since then.
There are so many varieties of food preparation here, including those of the ethnic sabahan     communities, the malays, indonesian, chinese and indian  ways of cooking food.  We were so closely knit and very helpfull to each other, where most basic necessities are by way of barter   trade between us- in our own world. Sometimes i miss this kind of life very much

This blog focus mainly on Malaysian traditional and contemporary wedding ceremonies and other cultural fiestas, where Malaysia has plenty to offer. The events captured on camera are further explored in artsy digital photography works.
There’s a lot to capture at a traditional wedding, because this celebration usually lasts for a few days, at both the bride and groom’s place...with lots of changing of traditional attires for the camera.

Butternut squash (cucurbita moschata) is a winter squash variety- can be roasted and toasted and also be puréed (to make a soup) or mashed into soups, stew, casseroles, breads, and muffins
